The white Côtes de Provence XIIIe Chateau Peyrassol is an organic blend of Vermentino and Ugni Blanc. It comes from vineyards grown on clay and limestone soils in the internal valleys, with the choice of plots with northern exposure to maintain freshness.
The winemaking follows traditional methods with temperature control after delicate pneumatic pressing. Organic cultivation in conversion involves the sowing of cereals between the rows to encourage soil life, and the manual harvesting of older vines. The refinement of a few months in stainless steel tanks on fine yeasts emphasizes the aromatic freshness.
Visually, the wine stands out for its golden color with green highlights. It offers the nose a harmonious blend of white flowers and pear, which gives way to notes of lemon and acacia honey. On the palate it is light, lively and at the same time silky, revealing a digestible and thirst-quenching wine. The citrus finish contributes to the complexity of this wine.
