Description
The Vermentino Tenuta Le Colonne of Dievole winery comes from 100% Vermentino grapes harvested towards the end of August. The vineyards are located on the slopes facing south west, whose soils are characterized by a mainly sandy composition, which gives the wine excellent minerality.
After the soft pressing of the grapes, alcoholic fermentation takes place, which takes place for about 12 days in stainless steel at a controlled temperature of 18 °C. The wine is then left to refine on its fine lees for about 3 months and, finally, it is then filtered and bottled.
Bright straw yellow in the glass, the aromas of white-fleshed fruit emerge, among which the ripe apple and peach stand out, which turn towards citrus and herbaceous notes. The sip is fresh, invigorating and delicate, with a clearly perceptible minerality.
It is the ideal wine to pair with fish appetizers, as well as an excellent vegetable-based first course. Try it with a risotto flavoured with herbs.
