Description
Vincent Girardin's Corton-Charlemagne Grand Cru comes from 45-year-old vines located in the municipalities of Aloxe-Corton, Pernand-Vergelesses and Ladoix-Serrigny. A favorable exposure gives the grapes a good acidity content. From the soil, rich in marl, clay and limestone, comes a broad and elegant olfactory and gustatory profile.
Winemaking begins with the manual harvesting of the grapes, with selection and slow pressing of the bunches. The must is placed in partially new French oak barrels, where it undergoes alcoholic and malolactic fermentation. Refines on the yeasts for at least 18 months.
This wine is characterized by a straw yellow color and an intriguing aromatic bouquet composed of mineral and vegetal notes which later evolve into nuances of flint and lemon peel. On the palate it offers a rich and complex taste that embodies in all respects the magical terroir of Burgundy.
Perfect in combination with creamed chicken and veal sweetbreads, it goes perfectly with foie gras and medium-long matured cheeses such as Comté or Cantal.
