Description
The Penley Estate Cabernet Sauvignon Phoenix is produced in the southeastern part of Australia and precisely in the Coonawarra region recognized as one of the most suitable areas for the production of this variety.
Coonawarra is influenced by the presence of ocean air currents that contribute to alternating cold winters with cool summer temperatures. With respect to the composition of the soil, it is here that Cabernet Sauvignon finds its home on a layer of iron oxide that has made the soil of Coonawarra famous with the name of 'Terra Rossa' according to evident outcrops on a limestone substrate. After harvesting, small batches are fermented at a controlled temperature, partly also in French oak barrels. Thanks to careful pumping over, the correct extraction of tannins and color is guaranteed.
Intense ruby red wine, it has aromas of black currant, cassis, blackberry, with balsamic hints and a pleasant hint of bitter cocoa on the nose. On the palate it is dense and enveloping, with well-worked tannins and great structure for a pleasantly long sip.
Given the medium and slender body, it is a wine suitable for red meats or savory first courses with mushroom sauces. Also try it with seasoned salami.
