Description
The sparkling rosé de Nit from Raventós i Blanc is a natural wine produced from Xarel lo, Macabeu, Parellada and Monastrell grapes, grown according to the principles of organic and biodynamic agriculture in the Conca del Riu Anoia region, in Sant Sadurní d'Anoia, Spain. The vineyards are located on clay and limestone soils of marine origin, rich in fossils, which give the wine freshness and minerality.
The vinification involves manual harvesting of the grapes and low-pressure pneumatic pressing. The varieties ferment separately in stainless steel tanks with indigenous yeasts. After fermentation, the wine ages on the lees for 18 months, without malolactic, to preserve freshness and obtain greater complexity. Only certified organic cane sugar is added during tirage.
On the nose it offers delicate aromas of red fruits, white flowers and light notes of pastry. On the palate it is fresh and vibrant, with a fine bubble and a pleasant acidity that balances perfectly with the minerality of the wine.
This sparkling rosé pairs perfectly with raw fish dishes, sushi and fresh salads.
