Description
Collio Sauvignon by Borgo Conventi comes from vines between 10 and 45 years of age, grown on soils composed of marl and stratified sandstone typical of the appellation, with the presence of clay in the highest part and finer components in the foothills, at the interior of a mild microclimate with rainy springs and hot and dry summers.
The harvest takes place carefully in the coolest hours of the morning with selection of the best bunches. After transporting the grapes to the cellar, a partial cold maceration and soft pressing are carried out. Fermentation takes place in steel at a controlled temperature as well as ageing, which continues on the fine lees until the following spring.
This white wine waters the glass with its straw yellow colour, crossed by beautiful greenish reflections. The nose is distinctive, intense and complex, with notes of green pepper and tomato leaf typical of the variety enriched by sensations of sour peach, flint and sage. In the mouth, it is elegant and full-bodied, with a long aromatic persistence.
Suitable in the company of appetizers and risotto with asparagus, it goes well with fish, shellfish and white meats.
