Description
Collio Ribolla Gialla di Borgo Conventi comes from grapes harvested in vines between 15 and 35 years of age, grown on soils composed of marl and stratified sandstone typical of the denomination, with the presence of clay in the upper part and finer components in the areas pedocollinari, within a mild microclimate with rainy springs and hot and dry summers.
The clusters are partly cold macerated, then subjected to soft pressing. The free-run must ferments for 10 days in steel with temperature control, followed by permanence on the fine lees until the following spring.
In the glass it shows a straw yellow color with golden reflections. The olfactory picture is intense and complex, with floral and fruity aromas in harmony with each other. The taste is fresh and structured, with great persistence.
Excellent in combination with aged cheeses and San Daniele ham, it is indicated in the company of prawns and shrimps.
