Description
The Collio Pinot Nero Casanova del Castello di Spessa originates from Capriva del Friuli, an area characterized by the soil of the so-called ponca, an alternation of layers of marl and sandstone, which together with a favorable temperature range between day and night, contribute to define the uniqueness of this wine.
The harvest takes place at the end of August followed by fermentation which takes place in conical oak vats, with daily manual punching down for a period of 15-20 days, a method which favors the extraction of color and aromas while maintaining the typical delicacy of the grape variety. Subsequently, the wine is transferred to barriques to rest in the bunker of Castello di Spessa for 12 months, a unique environment that contributes to the evolution of the wine, which is bottled without filtration to preserve its integrity and further refined in glass before marketing .
Visually it has an intense ruby color. On the nose, aromas of small red fruits and spicy hints emerge, creating an inviting bouquet. The palate is velvety and elegant, opening towards a long and broad finish, characterized by notes of raspberry and warm spices.
It pairs wonderfully with lamb and medium-aged cheeses, but also with tasty fish first courses. A wine capable of elegantly pairing with meals and enhancing their flavours.
