Description
The Collio Merlot Torriani del Castello di Spessa is a wine that embodies the territory of Capriva del Friuli, whose soil is made up of the typical ponca, or flysch of Cormons, characterized by a stratified alternation of marl and sandstone. The climate of the region, with little rainfall and significant temperature variations between day and night, favors the balanced maturation of Merlot.
The harvest takes place in the first ten days of October, followed by fermentation carried out partially in oak and stainless steel vats, with maceration for 15-20 days. After separation from the skins and malolactic fermentation, the wine matures in Nevers, Allier and Troncais oak barriques for 24 months, in the bunkers of the Castle, a historic place that contributes to creating unique conditions for evolution. Finally, the wine is bottled without filtration and further refined in the bottle.
It has an intense and vibrant ruby color. The nose reveals intense aromas of small red fruits, cherries, ripe red fruits, enriched by spicy notes of cinnamon and vanilla. These olfactory sensations anticipate a broad and full-bodied palate, which closes with a long and pleasant finish.
This Merlot is ideal in combination with braised red meats and medium and long-aged cheeses, offering a highly satisfying gastronomic experience which is enhanced by its structure and complexity.
