Description

The Colli Tortonesi Timorasso Derthona di Borgogno is produced exclusively with Timorasso grapes, grown in the areas of Monleale and the Tortonesi hills on silty limestone soils. The vineyards enjoy a favorable south-west and south-east exposure.

The vinification involves cold maceration of the grapes for approximately 3 days, followed by static decantation in steel. Fermentation occurs spontaneously in concrete containers for 25 days. The wine ages in steel for 10 months, to which a further 7 months of bottle aging are added, to best bring out the characteristics of the wine.

It has an intense yellow color, clear and consistent. The olfactory bouquet is complex and rich, fruity notes of pear and peach prevail, together with floral hints of acacia and hawthorn flowers, honey and hydrocarbons. In the mouth it is dry, broad, warm and soft, characterized by a balance between a high alcohol content and a marked acidity. The structure is balanced and particularly persistent.

This wine pairs perfectly with rich recipes, fish dishes based on anchovies and scallops, but also with appetizers from Piedmontese cuisine such as Russian salad and veal with tuna sauce, as well as with full-fat blue cheeses. Its versatility also makes it suitable for international dishes, from French raclette to Japanese tempura.
