Description

Ètymo by Zonin represents the synthesis of a long research path started for more than a decade in collaboration with the University of Bordeaux. The goal is to offer a wine that was the purest expression of the suitable territory of the Euganean Hills, hence the name that recalls the true, real meaning of a word. Located in the central-southern part of Veneto, south of the provinces of Padua and Vicenza, this area is characterized by a stratified soil, consisting of white flakes, very common in the area of Baone, limestone marl typical of the Torreglia area and volcanic trachyte present above all in the centre of the appellation, in Arquà Petrarca.

Here in the Euganean Hills, the Merlot, Cabernet Sauvignon and Cabernet Franc grapes are able to reach a perfectly balanced ripeness, enriching themselves with the qualities of minerality, finesse and elegance resulting from the soil characteristics of the territory. The different varieties are harvested at different times and left to ferment in steel with 25 days maceration. Part of the wine already blended is aged in French oak barriques for 16 months, while the remainder is aged for the same time in ovoid-shaped concrete amphora, in the jargon "egg", which favours the harmonious movement of the lees. Ètymo is available for sale after a further 12 months in the bottle.

It has a deep garnet red color. Its expressive and complex scent plays on notes of cassis, dark chocolate and tobacco, all complemented by a distinctive touch of graphite. In the mouth it reveals a seductive and multifaceted personality that strikes with a beautiful balance between the sensations of blackberry and black currant, velvety tannin and a delicate freshness. Its mineral body is gradually depleted in an aftertaste of sweet licorice and black pepper.

While demonstrating an innate versatility in food pairings, it is enhanced with roasts and grilled meats.

The egg depicted on the label recalls the concept of origin and pure form common to all crops in addition to the container used for ageing.
