Description
Carminium is the second wine from Inama, the winery's reference label. It is a red made from Carménère grapes with a more immediate but always fine and complex style. Carminium is a rich and intense wine, which is born in the wonderful area of the Berici Hills, which has always been very suitable for the cultivation of red grapes of Bordeaux origin. In the past, Carmenère was often confused with Cabernet Franc and only recently have the two varieties been clearly distinguished in the vineyard. The company has decided to focus heavily on valorising Carmenère, to highlight its interesting peculiar characteristics.
The vinification of Carminium begins with the manual harvesting of the grapes, which are then delicately destemmed so as not to break the skin of the grapes. The pre-fermentative maceration lasts 24-48 hours, followed by an alcoholic fermentation in steel lasting 23-28 days at a controlled temperature, not exceeding 28°C. After malolactic fermentation, the wine ages for 12 months in new and second passage French oak barriques. Subsequently, a 4-month refinement in steel follows, before bottling and a further refinement of at least 12 months in the bottle.
With a dark red color with violet reflections, Carminium is characterized by a broad and varied olfactory bouquet, where spicy and aromatic herbal hints play a leading role accompanied by notes of black fruits. The mouth is intriguing and direct, supported by velvety tannins, giving the wine an elegant and well-balanced structure.
Excellent with a mixed grill or roast pork, it goes very well with a platter of cold cuts and mature cheeses.
