Description
The Colli Aprutini Pecorino Centovie by Umani Ronchi is a white wine produced in the Abruzzo region. The grapes come from the Centovie estate, located in Roseto degli Abruzzi. The vineyards are grown on deep, clayey soils with a sandy and skeletal component. The agronomic management follows the principles of organic farming.
The harvest is carried out by hand in the first ten days of September to maintain a high level of acidity in the grapes and perfect health of the fruit. The grapes undergo soft pressing and the free-run must is separated from the pressing must, cooled and statically decanted. Fermentation takes place in steel tanks at a temperature of 16-18°C for 20 days. The refinement continues for approximately 12 months in cement and another 5 months in the bottle before marketing.
The wine has a straw yellow color with greenish reflections. On the nose, it offers fresh aromas of white fruit and citrus, with mineral notes. On the palate, it is fresh and tasty, with good acidity and a long and persistent finish.
It pairs perfectly with fish dishes, seafood and fresh cheeses.
