Description
Jacques Prieur's Clos Vougeot Grand Cru, coming from a vineyard of approximately 1 hectare dedicated entirely to Pinot Noir, is a wine that tells the story of a unique terroir. This vineyard, located within a 50-hectare clos created by the Monks of Cîteaux, boasts soil rich in clay, an element that gives the wine a powerful structure and a certain rusticity in the first years of life.
The harvest, carried out manually and with care, is the prelude to a careful and traditional winemaking process. The grapes, after being selected and completely destemmed, macerate for 21 days in open oak vats at a controlled temperature, with bi-weekly pressing. The malolactic fermentation takes place at 100%, and the aging of the wine takes place entirely in oak barriques for 21 months, resulting in a harmonious evolution of its organoleptic qualities.
This Clos Vougeot has an intense ruby red color and garnet-purple reflections. On the nose, it is rich and complex, with aromas of smoked tobacco and leather that evolve towards notes of black fruit, such as ripe cherry, and black olives. In the mouth, it is dense and deep, characterized by a pure fruitiness and spicy and peppery flavours, with pronounced but ripe and digestible tannins. Its structure promises excellent aging potential.
This wine pairs beautifully with intense and structured dishes, ideal for enhancing its complexity and depth, such as roasted or braised red meats, game and mature cheeses
