Description
This red wine by Cataldo Calabretta is made from Gaglioppo grapes selected from hilly vineyards located in the historic area of Cirò Classico. The vines, cultivated as bush vines in clay-limestone soils, have an average age of 20 years. The harvest is done manually in crates in the third decade of September, ensuring careful selection of the bunches.
Spontaneous fermentation is followed by a four-day maceration on the skins, allowing for the gentle extraction of aromas and structure. The wine ages for 18 months in concrete tanks, a choice that preserves the freshness and authentic expression of the grape variety without interference from wood.
On the nose, aromas of crunchy red fruits emerge, with light floral notes of violet and a hint of licorice. On the palate, it is fresh and vibrant, with delicate tannins and good persistence, making it an elegant and authentic expression of Gaglioppo.
It pairs perfectly with mushroom risottos, grilled meats, game, and pasta with ragù, enhancing the flavors with its lively freshness.
