Description
This rosé wine from Cataldo Calabretta is made from Gaglioppo grapes selected from a few hectares of flat vineyard, with an average age of 35 years, grown in clayey-silty soil in Calabria. The harvest is done manually in boxes during the second decade of September, ensuring a careful and meticulous collection.
After pressing, the must undergoes a short maceration of 24 hours to extract color and delicate aromas. Spontaneous fermentation is followed by aging for six months in steel tanks on the fine lees, with periodic bâtonnage to enhance its complexity and structure.
On the nose, it offers elegant hints of small red fruits, citrus, and briny notes. On the palate, it is fresh and harmonious, with pleasant saltiness and a persistent finish that recalls fruity notes.
It pairs perfectly with fish tartare, soups, sushi, and pizza, enhancing their freshness with its lively acidity.
