Stellenbosch WO Circle of Life Red 2020 Waterkloof

Circle of Life Red by Waterkloof winery is a blend of Syrah, Merlot, Petit Verdot and Cabernet Franc made in South Africa.

After the harvest and selection of the grapes, the fermentation is carried out in whole bunches using indigenous yeasts present on the skins. This is followed by 30 days of contact with the skins and aging in large and small barrels of which only 10% is of first use. After 18 months of maturation, the blend is made before 9 months of further ageing in wooden vats.

Medium intensity ruby red, with hints of ripe red and black fruits, herbaceous notes of rosemary and tomato leaf and peppery and spicy references. On the palate it is warm and enveloping, with soft tannins and a good acid tension that combines the freshness of the fruit and the processed tertiaries before a medium-long finish.

Ideal with grilled red meats, veal roulades and aubergine parmigiana.
