Description
Joseph Drouhin's Chorey-les-Beaune is a red Burgundy wine, produced exclusively from Pinot Noir grapes grown in the vineyards surrounding the small village north of Beaune and almost at the foot of the Corton hills. This wine-growing area, although modest in size, has a long history dating back to the Gallo-Roman era.
The vinification begins using grapes from the Drouhin family's estate and purchases from local producers who follow a strict specification. The grapes are harvested manually in perforated crates to ensure their integrity, followed by careful selection. After total destemming, fermentation and maceration take place in small open tanks for a period of 2-3 weeks, with the use of indigenous yeasts. The aging continues in oak barrels for a period of 12-16 months.
It stands out for its bright and clear red color. On the nose it presents surprising fruity aromas with notes of blackberry jam, while in the mouth it reveals softness, fluidity and roundness. As the years pass, more complex hints of truffle and undergrowth emerge, which evolve towards almost wild notes.
This red wine is the ideal accompaniment to red meats, poultry and mushroom dishes.
