Description

Ao Yun, from the Chinese "wandering (between) the clouds" is a wine that comes from Cabernet Sauvignon and Cabernet Franc grapes grown on terraces located at 2,200-2,700 meters above sea level. It is a wine that tells of unexplored lands, those of the Himalayan terroir, at the foot of the Meili Xue Shan chain, in the Yunnan region, on the border with Tibet. The grapes come from over 300 small fragmented plots distributed between the villages of Adong, Shuori, Sinong and Xidang.

It is obtained from a very complex process, made of vineyards very distant from each other, from difficult ripening, from transport carried out on foot or by means of mules, from manual harvests, from imposing altitudes and from respect for very strict traditions that require a craftsmanship and local know-how combined with a very thorough knowledge of the area. The vinification takes place separately for the different terroirs, performed with aeration to compensate for the low oxygen levels present at these altitudes. It ages for 3 months in new oak barrels.

It has a very deep ruby red color. It is characterized by a great wealth of aromas layered on the nose, given by the encounter of hints of blond tobacco and Yunnan tea leaf together with yellow cherry, raspberry and black currant, with a final touch of almonds and peppermint. The palate is of extraordinary finesse, freshness and elegance, round and juicy, well balanced.

Divine in the company of braised and stewed adult beef, it is excellent with lamb dishes or with a duck breast. To be enjoyed with fatty and tasty cheeses.
