Description
Chianti Rùfina Riserva del Don by Colognole is born in the north-east area of the Northern Apennines, from a careful selection of Sangiovese grapes from three vineyards different in terms of exposure and soil characteristics.
The vinification begins with the pressing after which the must ferment with maceration on the skins for about 20 days. The wine ages for 18 months in Slavonian oak barrels and in French Allier oak barriques. It completes the aging phase with an 18-month stop in the bottle.
It has a concentrated ruby red colour. Its scent tells of floral scents of violet and cherry, which are counterpointed by spicy and balsamic notes. Concentration and firm tannins in the mouth at the same time denote an extraordinary elegance that amplifies persistence.
Excellent with baked lamb or with a seasoned pecorino, it is recommended in the company of a good Florentine steak.
