Description
Dievole's Chianti Classico Riserva Novecento owes its name to the 900 years that have passed since the first harvest carried out by the historic Sienese company.
The wine is produced with 100% Sangiovese grapes, harvested in early October. The vinification is characterized by a spontaneous fermentation, developed in concrete vats, with the use of indigenous yeasts, at a controlled temperature of 26-28 °C. After malolactic fermentation, the product is aged for about 18 months in non-toasted French oak barrels from the noble forests of Allier, followed by a further ageing in bottle for at least 6 months.
It has an intense ruby red colour. The nose opens up strong aromas of ripe red fruit, enriched by elegant spicy notes that give elegance and complexity to the organoleptic analysis. On the palate it is full-bodied, with well-balanced tannins, excellent acidity and a pleasant minerality. In the finish it proves to be a wine of good persistence and bewitching refinement.
Wine with a long life perspective, this Chianti Classico Riserva is perfect to accompany cheeses, game and grilled meat, typical of the Tuscan tradition.
