Description
In the Chianti Classico Riserva Cultus Boni di Badia a Coltibuono there is the desire to explore the potential of the prince vine of Tuscany, Sangiovese, to create an innovative wine inspired by the great tradition of these places.
It is made from Sangiovese grapes and many other complementary varieties, including Ciliegiolo, Colorino, Pugnitello, Mammolo, Malvasia Nera, but also Fogliatonda and Sanforte. Harvesting is done by hand, only in the vineyards considered to have the most favorable exposure. The fermentation takes place spontaneously with indigenous yeasts and with maceration of about 40 days on the skins. Ages for 24 months in barrels of various sizes and in French oak barriques.
In the glass it has an intense and bright ruby red color. The aromas are reminiscent of morello cherries and ripe fruit, enriched by balsamic and spicy reminiscences due to long aging. Full-bodied and fresh, with well-integrated taninins, it is an elegant and soft wine, ideal for a dinner among connoisseurs.
It is excellent to accompany roasts and game dishes, as well as a rich platter of aged cheeses.
