Description
The Chianti Classico Gran Selezione CeniPrimo by Ricasoli stands out for its excellent olfactory intensity, fresh fruit and violet flowers, good structure and good volume. Elegant and well developed tannic content, balsamic hints. A pure Sangiovese from the vineyard of the same name which lies on the great valley of the Arbia river, in the southernmost part of the property. The geological formation on which CeniPrimo is located is the one called the Ancient Fluvial Terrace. The vineyard, of just 6 hectares, is located 300 meters above sea level and has a south-west exposure. The grapes are harvested by hand and selected.
The grapes are destemmed and transferred by gravity into 100 hl stainless steel truncated conical tanks, are then inoculated with selected yeasts. Fermentation follows at a temperature of 24-27°C with daily punching down and maceration on the skins for about 14-16 days. The wine then ages for 22 months in 500-litre tonneaux, 30% of which are new and 70% second-use before being bottled.
In the glass it has a deep ruby red color. The nose is characterized by aromas of red and violet flowers, red fruit such as cherry and spicy hints. The sip is warm and harmonious, with a long finish.
Excellent in combination with the classic grilled Florentine steak, it is also perfect with aged cheeses.
