Description
Chianti Classico Riserva Montebuoni is a red wine produced by Castello di Ama with grapes from the vineyard of the same name located at an altitude between 420 and 500 meters above sea level, with a North-West/South-East exposure. This wine is obtained mainly from Sangiovese with a small addition of Merlot, grown on clay-limestone soils.
The harvest is done manually and the grapes are vinified in stainless steel with indigenous yeasts. Fermentation takes place at a controlled temperature of 28-30°C, with frequent manual pumping over to extract the best color and aromas. Maceration lasts about 26 days, followed by malolactic fermentation with native bacteria. The refinement takes place in second passage French oak barriques for 12 months, before bottling in spring.
Intense ruby red in color with purple highlights, it expresses fruity aromas of blackberry, raspberry and currant on the nose. On the palate it is harmonious, with a persuasive and full entry, supported by an elegant polyphenolic profile that persists for a long time.
Perfect when paired with red meats, game and mature cheeses.
