Description
The Chianti Classico Riserva di Bibbiano is a tribute to the viticultural tradition of Castellina in Chianti, produced from Sangiovese grapes grown on the slopes of the property. This Reserve represents the essence of Chianti, with a dedication to quality that reflects the pride and heritage of one of Italy's most celebrated wine regions.
The harvest begins at the end of September, with careful selection of the Sangiovese grapes to express the best of the territory. Fermentation takes place for 23 days using steel and concrete vats, combining modern technologies with traditional methods to optimize the extraction of colors and flavours. Subsequently the wine matures for 18 months, partly in concrete and partly in French oak tonneaux.
The color is a deep ruby red, symbol of a wine of great intensity and structure. Lively aromas of plum and cherry emerge on the nose. In the mouth, the wine is dry, harmonious and well structured, with sweet tannins that balance the typical robustness of Sangiovese, leaving a pleasantly persistent fruity sensation in the finish.
It pairs perfectly with pasta with ragù, but is also excellent with red meats cooked on the grill or stewed.
