Description
Castello di Bossi's Chianti Classico Riserva Berardo is obtained from Sangiovese grapes grown at 350 meters above sea level, on soils composed of yellow clay, tuff and sedimentary rock of Tuscany. The vines, with an average age of 35 years, are trained with the Spurred Cordon system, benefiting from a south-west exposure that ensures perfect ripening of the grapes.
The harvest takes place between September and October, both manually and mechanically. The grapes ferment at 29-31°C, with a 20-day maceration to maximize the extraction of color and structure. The wine ages for 24 months in barrel and a further 12 months in bottle, thus developing a complex and well-defined aromatic profile.
Deep purple in color, this Chianti Classico Riserva stands out for its aromas of plum, spices and menthol notes. In the mouth it is full-bodied and creamy, with soft and well-integrated tannins. The acidity is balanced and the finish is long and enveloping, with a persistence that offers great satisfaction.
Perfect with medium-aged cheeses, pan-fried lamb chops and bean soup with bacon.
