Description
Chianti Classico Gran Selezione Vigna di Montornello di Bibbiano is a superb expression of Sangiovese, grown on the homonymous slope of Montornello in the historic area of Castellina in Chianti. This side is particularly known for benefiting from cooler and rainier summers, conditions which favor the dilution of the wine's structure to the advantage of greater aromatic complexity.
The grape harvest begins on October 10th, with selection of the best Sangiovese bunches. Fermentation takes place for 33 days in concrete tanks. The wine then ages for 24 months, starting in concrete tanks to preserve the purity of the fruit and concluding in French oak tonneaux to add complexity and texture. A further refinement of 6 months in the bottle precedes marketing.
The color is an intense ruby red with garnet reflections, the promise of a wine of notable structure and longevity. On the nose it offers a rich bouquet with notes of cherry, black cherry and ripe red fruits, enriched with nuances of undergrowth and spices. On the palate it reveals a dense structure, balanced by a lively freshness and a persistent flavor.
It is perfect to accompany robust dishes such as stewed or grilled red meats. Its structure and complexity also make it ideal with mature cheeses, where its body and intensity can balance the richness of the flavors.
