Description
Chianti Classico Colledilà by Barone Ricasoli is the first of the 3 crus to have seen the light. It is distinguished by its complex structure and grand, modern elegance. A 100% Sangiovese from the vineyard of the same name which lies on a calcareous clayey soil, very stony, rich in calcium carbonate and poor in organic matter. The geological formation on which Colledilà is located is that of Monte Morello, also known as Alberese. The 7-hectare vineyard is located at 390 meters above sea level and has a south-east exposure. The grapes are harvested by hand and selected.
The grapes are destemmed and transferred by gravity into 100 hl stainless steel truncated conical tanks, are then inoculated with selected yeasts. Fermentation follows at a temperature of 24-27°C with daily punching down and maceration on the skins for about 14-16 days. The wine then ages for 22 months in 500-litre tonneaux, 30% of which are new and 70% second-use before being bottled.
A pure and fresh wine, with strong notes of black cherry and aromas of blackcurrant and flowers. In the mouth it has lively but well integrated and balanced tannins. The finish is elegant, with a pleasant aftertaste of spicy wood.
Perfect to accompany grilled red meats and game, it is excellent in combination with aged cheeses.
