Description
Dievole's Chianti Classico hails from the vineyards of Castelnuovo Berardenga, in the province of Siena.
It is produced with Sangiovese, Canaiolo and Colorino grapes, harvested at the beginning of October. The fermentation is spontaneous and takes place in temperature-controlled raw concrete vats. After malolactic fermentation, it is aged in large, unroasted French Allier oak barrels for about 14 months, and then in bottle for a further 3 months before being released.
Dievole's Chianti Classico has a bright ruby red colour. The nose opens with intense aromas of berries and cherries, enriched with floral notes of violets. On the palate it is fresh and well-balanced between acidity and tannins, harmonious and with a pleasant and persistent finish.
To be enjoyed now or over 5 years, this wine is perfect with cheeses, pasta with traditional sauces and grilled meats.
