Description
Chianti Classico Catignano di Dievole is a Tuscan red wine that comes from the Catignano plateau, located in the southernmost part of the Dievole territory, in the Chianti Classico. The soil has a marked calcareous component with abundant skeleton, while the western exposure guarantees optimal exposure to the sun during the day and cool nights, creating a high temperature range that favors the aromatic development of the 100% Sangiovese grapes.
The vinification involves fermentation in raw concrete vats for 14-15 days, at a controlled temperature of maximum 28 degrees. The wine then ages for about 13 months in untoasted French oak barrels, followed by bottle aging for at least 3 months, giving structure and balance.
The bouquet is distinguished by aromas of red fruits such as blackberry and currant, accompanied by tertiary notes of tobacco, leather, graphite and licorice. On the palate it is warm and juicy, with persistent hints of ripe red fruit that enhance its complexity and elegance.
Perfect to enjoy with roast meats or mature cheeses, it enhances the intense flavours of traditional Tuscan cuisine.
