Description
Châteauneuf-du-Pape Les Hauts des Coteaux is a blend of Grenache, Mourvèdre and Syrah. This wine is the flagship cuvée of Cellier des Princes, produced only in the best years, from the Courthezon plots and then to Bedarrides and Sorgues. It stands out for being produced from 60-year-old vines located on the most suitable slopes for growing grapes.
The harvest is manual, with rapid transport in small containers to preserve the quality of the raw material. The winemaking involves a 25-day fermentation at controlled temperatures, followed by a 12-month refinement in oak barriques, one third of which are new, and then in the bottle, in order to achieve the perfect aromatic balance.
It has an intense red color. On the nose it develops complex aromas of vanilla, toasted notes and liquorice. On the palate the tannins are soft and silky, with a long spicy and elegant finish.
It pairs perfectly with meats in sauce, such as venison fillets with blueberry sauce, game and refined cheeses.
