Description
The Châteauneuf-du-Pape Les Escondudes by Cellier des Princes is produced mainly from Grenache grapes, in the Bédarrides terroir, characterized by rounded pebbles on a clayey subsoil which helps to give the wine its structure and complexity.
After destemming, fermentation takes place in steel and lasts 20 days at a controlled temperature, completed by daily punching down. The refinement takes place in concrete tanks for 10-12 months in order to further refine the profile of the wine.
Visually it presents a ruby red color. Notes of red fruits such as blackcurrant and cherry emerge on the nose, enriched by a spicy finish that adds complexity and depth. On the palate, it stands out for a well-balanced, full and round tannic structure, with hints of liquorice and spices, which lead towards a long and persistent finish.
It is ideal in combination with rich and tasty dishes, such as first courses with ragù, roast meats, game and mature cheeses.
