Description
Xavier Vignon's Cuvée Anonyme Rouge wine is produced with a blend of Grenache, Mourvèdre, Syrah and other traditional grape varieties of the Châteauneuf-du-Pape appellation. The grapes come from vines planted on different soils, including galets roulés, sands and safres.
Winemaking takes place at low temperatures to preserve freshness, with limited extraction of tannins from the seeds to maintain the fineness of the tannins in the skins. The refinement lasts 18 months: a third in cement vats, a third in nut-trunk vats and a third in demi-muid barriques.
The wine has an intense purple color, with aromas of raspberry, black fruit, pepper and candied orange. On the palate it is complex, with a good structure and perfect balance, and offers notes of violet in the finish.
It pairs beautifully with grilled red meats or game stews.
