Description

The Châteauneuf-du-Pape of Cellier des Princes originates from the pebbly and sandy soils of the village of Courthezon, located in the north-east of the homonymous appellation.

It is mostly obtained from Grenache grapes, with small additions of Mourvèdre and Syrah, harvested at the perfect degree of ripeness. Fermentation takes place at a controlled temperature of 28-30 ° C, with maceration of 28-35 days. The wine ages in concrete tanks for 8-12 months without any ageing in wood, so as to allow the purest expression of the predominant grape variety, Grenache, and its terroir.

It has an intense ruby red colour. On the olfactory examination it reveals ample and elegant: aromas of raspberry, blackberry and cherry appear at the edge of the glass and then give space to spicy tones of lavender, thyme and rosemary. It is characterized by an excellent balance in the mouth, with velvety and well integrated tannins, demonstrating an unparalleled finesse largely due to its terroir of origin.

Fabulous in the company of roast meats and game, it is recommended in combination with medium-long-aged cheeses.
