Description
Domaine de Savagny's Château Chalon was born in the Baume-les-Messieurs valley, in the Jura valley. This special wine also has its own bottle, called "clavelin", of 0.62 cl. This quantity also symbolically represents the yield of finished product from a liter of base wine.
The production of this wine, made from Savagnin grapes, derives from the long tradition of "vin jaune". It is characterized by the oxidation deriving from the maturation of the wine in unfilled barrels.
In the glass it has an intense straw yellow colour. The nose is complex and reveals aromas of nuts, ripe yellow apples, candied fruit and spices such as curry and vanilla. The sip is intense and persistent.
It goes very well with noble poultry and white meats in general, as well as aged cheeses such as Comté.
