Description
Chassagne-Montrachet Vieilles Vignes is a fine white wine produced by Domaine Guy Amiot et Fils, a historic winery located in Chassagne-Montrachet, in the Burgundy region of France. Made exclusively with Chardonnay grapes from old vines grown on calcareous-clayey soils, with very low yields, which allow for wines with a high aromatic concentration and intense minerality.
The production follows traditional practices that respect the terroir to the maximum. After a careful and selective harvest of the grapes, the fermentation takes place in French oak barriques, where the wine remains to mature for about 18 months. This long refinement in wood helps to develop an aromatic complexity and a remarkable depth, while maintaining the freshness and elegance typical of Chardonnay.
It has a straw yellow color with golden reflections. On the nose it releases complex aromas of ripe fruit, flowers and mineral nuances that recall salts. On the palate it is rich and enveloping, with a beautiful mineral freshness that gives balance and persistence. The combination of lively acidity and the softness derived from the aging in wood makes this wine extremely refined and pleasant.
It pairs perfectly with fish dishes, shellfish, white meats and soft cheeses, enhancing its elegance and aromatic complexity.
