Chardonnay 2021 Pegasus Bay
Description
The Pinot Noir produced by Pegasus Bay comes from the Waipara Valley, an area close to the southern coast.
After harvesting, the whole bunches are softly pressed. The uncleared must is placed in 70% old French oak barrels to avoid the transfer of excessive aromas. Here the fermentation takes place thanks to indigenous yeasts developed from the grapes. Maturation in contact with the yeasts follows. In summer the malolactic fermentation also takes place, interrupted when the desired degree is reached. The aging in cask follows for 12 months.
Straw yellow in color, it has aromas of lemon, yellow melon, peach and nectarine on the nose. On the palate it shows the same fullness of yellow fruits interspersed with a pleasant minerality that recalls flint with brioche veins and lactic notes. Compact and decisive, it has a long finish.
Suitable for first courses such as vegetarian lasagna, it goes well with grilled vegetables and baked fish dishes.
