Champagne Blanc de Blancs Apanage from the Pommery house is made from only Chardonnay grapes, harvested from 17 Grand Cru vineyards located 70% in the Côte des Blancs and 30% in the Motagne de Reims area.
Every single particle is vinified separately. Once the alcoholic and malolactic fermentation is complete, all the base wines are brought together in the final cuvée. The second fermentation takes place in the bottle according to the champenoise method, followed by an aging on the lees of at least 42 months.
It is tinged in the glass with a beautiful pale golden yellow with light green hues. The perlage is sustained and of great finesse. The nose is lively and complex and reminiscent of the spring season, with its floral hints of acacia, jasmine and linden flowers, to then continue on citrus and creamy notes. The keywords to describe this Champagne Blanc de Blancs to the taste are delicacy, elegance and freshness.
It lends itself to being paired with refined appetizers, first courses and second courses based on fish.
