Description
In 1668, Dom Pierre Pérignon, a monk at Hautvillers Abbey, aspired to create the "perfect wine". Today, Vincent Chaperon, Chef de Cave, continues this legacy with his innovative vision. This creative approach pushes the House to constantly push its limits.
Dom Pérignon Vintage 2015 is a vintage that stands out for its extraordinary character, due to extreme climatic conditions. The year was characterized by a cold spring followed by a hot and dry summer, which allowed the vines to produce grapes of exceptional quality. The harvest began on September 7, under a brilliant sun, giving the grapes an exceptional balance and extraordinary generosity.
As for the winemaking process, Dom Pérignon uses only the best Chardonnay and Pinot Noir grapes, 49% and 51% respectively, harvested in the same year to maintain the integrity of the vintage. The wine is aged in the cellars for at least eight years, during which time the wine develops its complexity and aromatic depth.
On the nose, Dom Pérignon Vintage 2015 presents a complex aromatic profile with notes of toasted cocoa and spices such as anise and cardamom, balanced by delicate floral aromas of lime, jasmine and peony. On the palate, it offers a fruity and botanical freshness with subtle hints of orange and green papaya. Its structure leaves a lasting impression, characterized by a unique texture that culminates in a long finish.
This Champagne pairs beautifully with haute cuisine dishes such as oysters and shellfish, or creamy cheeses, enhancing their complex flavours. Its elegance and refinement make it ideal for special occasions and celebrations.
