Description
Rosé de Saignée Brut Nature is a sparkling wine produced from grapes grown on a clay-limestone terroir facing north. The estate was created in 1946 by the winemakers of Chavot-Courcourt. Chavost is the ancestral name of the village located between the church of Saint-Martin and the Mont-Félix hill, on which a castle once stood. The maison produces Champagne from organic farming. This label belongs to the range of Champagnes without added sulphites.
The wine is obtained from Pinot Noir and Pinot Meunier, with 100% of the Saignée technique. The vinification involves maceration in stainless steel tanks at a controlled temperature, followed by refinement in French oak barriques, all without the addition of sulphites. Pre-fermentative maceration occurs cold without enzymes, tannins or chaptalization. Alcoholic fermentation takes place at 17°C with indigenous yeasts, followed by malolactic fermentation at 20°C.
On the nose it is very powerful, with aromas of red fruits typical of the two Pinots (Noir and Meunier), blackcurrants, cherries and compound raspberries. On the palate it is very structured, vinous and with great length.
Perfect to enjoy alone or paired with refined fish and seafood dishes, fresh cheeses and light appetizers.
