Crowned "Champagne of the decade" 2000-2009, in front of the likes of Clos du Mesnil by Krug, Dom Pérignon and Cristal by Louis Roederer, always within the same decade of vintages, the Rare Millésime is the iconic champagne of the Piper-Heidsieck house , yet another creation by the talented chef de cave Régis Camus.
It is the happy marriage of Chardonnay varieties from the Montagna de Reims and Pinot Noir, coming from 8 Champagne crus. The grapes enjoy beneficial sunny climates, where they reach the perfect stage of ripeness. The Rare Millésime is released by the maison after 10 years of aging on its lees.
The eye is pure crystal, with a bright citrine yellow hue, enlivened by a bright and persistent perlage. The first hints that can be perceived are reminiscent of honeysuckle, iris and jasmine. Then it is the turn of vetiver and exotic woods, enriched with notes of white pepper, ginger, cumin and a mineral touch that enhances the complexity of this bubble. On the palate it is silky and soft, delicious, exotic, superb.
Ideal in the company of refined dishes such as caviar, green curry foie gras, or a comb carpaccio with white truffle oil
