Champagne AOC Grand Cru Extra Brut Champ d'Alouettes Le Mesnil-Sur-Oger 2005 Pascal Doquet

Pascal Doquet's Champagne Champ d'Alouettes is a refined Blanc de Blancs made from 100% Chardonnay grapes harvested from the Lieu-Dit parcel located in Le Mesnil-sur-Oger, a Grand Cru village in the prestigious Côte des Blancs.

The vinification takes place in fût de chêne, giving the wine a complex structure and a unique aromatic depth. After prolonged aging on the yeasts for over 15 years, the final dosage is Extra Brut.

In the glass, this Champagne presents a brilliant golden yellow color and a fine and persistent perlage. On the nose, it opens with notes of citrus fruits, green apple and white flowers, accompanied by nuances of hazelnut, vanilla and bread crust. On the palate, it is elegant and mineral, with lively acidity and a long, harmonious finish.

Perfect as an aperitif, it pairs beautifully with raw fish dishes, shellfish and fresh cheeses.
