Description
The Champagne Grand Cru Blanc de Noirs Extra Brut by Paul Déthune is an elegant expression of the Ambonnay vineyards, entirely obtained from Pinot Noir grapes, enriched by a portion of reserve wines from 40 different vintages which contribute to determining its stylistic signature.
The harvest, with rigorous selection of the best grapes, is followed by fermentation and maturation in oak barrels of different sizes with different effects on the starting raw material. Once the refermentation in the bottle is completed, this champagne undergoes refinement for at least 24 months.
Its bright golden yellow color heralds a rich bouquet in which delicate notes of toasted wood and citrus fruits alternate with hints of apricot and biscuit but also traces of blackcurrant, liquorice and elderflower. On the palate it is creamy and fresh, enriched by a well-integrated fruity note and a saline and persistent finish.
Excellent to serve with peppered foie gras, it pairs very well with duck breast or a classic veal medallion.
