Description
"Shaman" is a Champagne produced by the Marguet maison, founded in Ambonnay in 1905 and managed since 2004 by the young Benoît Marguet, who follows a modern and unconventional vision, typical of the new Champagne vignerons.
This Champagne comes from a blend composed mostly of Pinot Noir and the remainder of Chardonnay, cultivated according to the principles of biodynamic agriculture. The grapes come from old vines grown in the villages of Ambonnay and Bouzy, with additional grapes sourced from trusted vineyards in Verzy, Mareuil sur Ay, Cumières and Rilly la Montagne. After harvesting, the grapes undergo an initial spontaneous fermentation in wooden vats thanks to the presence of indigenous yeasts. The second fermentation takes place in the bottle, as required by the Champenoise Method, and the wine rests on the yeasts for 24 months. The Champagne is then disgorged and bottled without the addition of sulphites.
In the glass, the "Shaman" shows a straw-yellow color tending towards gold. The bubbles are fine and persistent. On the nose there are fruity and citrus notes, enriched by nuances of yeasts. On the palate, it is medium-bodied, broad and enveloping, with a fresh and creamy sip that ends with an excellent persistence finish.
Perfect to enjoy alone or paired with refined fish and seafood dishes, fresh cheeses and light appetizers.
