Description
The Extra Dry Champagne L'Ame de la Terre by Françoise Bedel is the result of a blend dominated by Pinot Meunier grapes and completed by Chardonnay and Pinot Noir grapes, coming from 30-60 year old vineyards located on soils composed of silt, marl and limestone.
Fermentation takes place half in steel and half in oak barrels. Once the malolactic fermentation has been completed, the base wine undergoes a second fermentation in the bottle according to the dictates of the Champenoise method. It refines for 9 years on the yeasts in order to develop its complexity.
It has a straw yellow color, with a fine and persistent perlage. Aromas of white pulp fruit and spices emerge on the nose, anticipating a lively and balanced palate that culminates in a remarkably fresh finish.
It is particularly suitable in combination with shellfish and fish-based dishes.
