Description
The Champagne Extra Brut Blanc de Blancs Grand Cru Vieille Vigne du Levant from the Larmandier-Bernier house comes entirely from vines between 60 and 85 years of age in the Grand Cru of Cramant. Initially named Vieille Vigne de Cremant, it changed its name to the current one to avoid confusion with the Crémant denomination, referring to its favorable south-east exposure.
The Chardonnay bunches are softly pressed and the resulting juice is immediately transferred into wooden barrels where a spontaneous alcoholic fermentation begins with indigenous yeasts and a subsequent malolactic fermentation. After maturing for about 12 months in oak, the refermentation in the bottle takes place according to the Champenoise method, with aging for 9 years on its own yeasts.
It appears in the glass with a straw yellow color, embellished with a minute and persistent perlage. On the nose it reveals intriguing aromas of peach and bread crust, white flowers, honey and pastry. Full-bodied and soft, it closes on a persistent and fruity finish.
Excellent to serve as a refined aperitif, it can accompany both chicken with mushrooms and delicious seafood recipes.
