Description

The Champagne Ultradition Extra-Brut by Laherte Frères is a blend of Pinot Meunier, Chardonnay, Pinot Noir and the addition of reserve wines aged in barrels on the yeasts. Produced in the territories of the Vallée de la Marne and the Coteaux Sud d'Épernay. The selection of grape varieties creates a harmonious blend that reflects the diversity of the terroir.

Manual harvesting at full maturity and traditional pressing lay the foundations for meticulous winemaking. Alcoholic fermentation takes place in barrels of different sizes. The partially carried out malolactic fermentation is followed by 48 months of aging on the yeasts. 50% of the blend is made up of reserve wines from previous years, aged on fine faces, which enrich the Champagne with nuances and depth.

Visually, it has a straw yellow color, while delicate notes of oxidation emerge on the nose, enriched by spicy and lemon hints, with a background of toasted bread. On the palate, the structure is enveloping and rich, balanced by a finely intertwined acidity with a well-calibrated dosage, which together give a pleasant persistence.

This Champagne pairs beautifully with oysters, seafood and shellfish, enhancing their flavors and creating an excellent gastronomic accord.
