Description
The Champagne Rosé Les Beaudiers by Laherte Frères is produced exclusively with Pinot Meunier from the "Les Beaudiers" plots in the Chavot terroir. The vines, planted between 1953 and 1965, take root in shallow clay and silt soils, with the presence of flint and small pebbles, over a chalky subsoil. Cultivation is done in harmony with nature, using ecological methods, short pruning to limit production, and careful manual work to ensure healthy, quality grapes.
The grapes are hand-picked at perfect ripeness with careful selection. After de-stemming, the must undergoes a maceration of 12-14 hours, followed by alcoholic fermentation with indigenous yeasts in barriques. Malolactic fermentation is not carried out to preserve freshness and liveliness. The wine ages on fine lees to enhance its aromatic complexity.
Of intense rosé color with pomegranate hues, it opens on the nose with vibrant notes of watermelon, strawberries, and rose petals. On the palate, it stands out for its depth and richness, with a perfect balance between vibrant acidity, crunchy red fruit, and a pleasant creaminess that accompanies the long finish.
It pairs perfectly with fish carpaccio, shellfish, and spicy dishes from Asian cuisine.
