Françoise Bedel's Champagne Extra Brut Jouvence is produced mainly from Chardonnay and Pinot Meunier grapes, with small additions of Pinot Noir, coming from vineyards aged between 30 and 60 years planted on soils characterized by a complex profile of clay, silt , marl and limestone, which gives this bubble a distinctive minerality and notable complexity.
The fermentation of the base wine takes place in steel, followed by partial malolactic fermentation. The second fermentation takes place by refermentation in the bottle according to the Champenoise method, so this champagne ages for 9 years on its own yeasts in order to develop an exceptionally rich organoleptic profile and a creamy texture.
It presents itself to the eye with a golden yellow color and a fine and persistent perlage. On the nose it offers an intriguing bouquet of yellow pulp fruit, cinnamon and dried fruit. The sip is delicate, fresh and tasty, with a persistence that invites the next sip.
This champagne is ideal in combination with fish starters, steamed shellfish and risottos.
