Description
The Champagne Extra Brut Grand Cru La Cote Faron from the Jacques Selosse house comes from the renowned Ay vineyards.
It is made exclusively with Pinot Noir grapes, harvested exclusively by hand. Fermentation takes place in oak barrels. Followed by refermentation in the bottle according to the principles of the Champenoise method with subsequent aging for 72 months on its own yeasts.
The straw yellow color and the minute and persistent perlage anticipate a nose of quince, honey and yeast. In the mouth it is elegant and balanced, with a surprisingly mineral finish.
It is perfect in combination with seafood, fish and risottos.
